
This is an excellent side dish. And my favorite kind of recipe – one that is naturally gluten and casein free. No substitutions or using special ingredients. Just basic basic basic!! Eventually, I would love for us to be eating like this all the time, just natural whole foods. It feels so good to feed my family food that is free of chemicals, additives and preservatives.
3 baking potatoes, peeled and thinly sliced into rounds
1 yellow onion, peeled and thinly sliced into rings
olive oil
minced garlic or garlic powder to preference
salt and pepper to taste
Use just enough olive oil to coat the bottom of a casserole dish. Layer potatoes on bottom, then onions, potatoes, onions and end with potatoes. Sprinkle garlic, salt and pepper on top. Cover in foil and bake in a 400 degree oven for 35 minutes or until potatoes are fork-tender and just starting to brown around the very tops of the edges.
